Easter Show Cake Recipes

Our wonderfully popular Carrot Cake, Apple & Date Cake and Chocolate Mud Cake as seen and tried at the Easter Show 2021. You all asked for it so here they are!

Easter Show Carrot Cake

Ingredients

  • 1 1⁄4 Cup Plain Flour

  • 1 Cup Lakanto Golden Sweetener

  • 2⁄3 Cup Lakanto Baking Blend

  • 1⁄2 Cup Lakanto Icing Powder

  • 2 Cups Grated Carrot

  • 1 3⁄4 Cups Water

  • 300g Cream Cheese

  •  1⁄2 Cup Canola Oil (Or Similar)

  • 2 Whole Eggs

  • 3 tsp Cornflour

  • 2 tsp Gluten

  • 2 tsp Bi Carb Soda

  • 2 tsp Vanilla Essence

  • Pinch salt

  • 50g Walnuts


Tip: Use a 50/50 mix or almond and Coconut Flour to create a gluten free cake  

 

Method

  1. Preheat the oven to 180c

  2. In a mixer combine the eggs and sweeteners until light then add in the carrot and half the water, vanilla and salt.

  3. Next mix in the oil and flour, gluten corn flour and bicarb, mix until smooth and a batter consistency, add remaining water until the batter forms drops off your spoon.

  4. Use a 8 inch cake tin or similar size baking tray.

  5. Spray with canola oil.

  6. Pour the batter into the tray and bake for approx 40 minutes until golden a springy to touch.

  7. Remove from the oven and allow to cool.

  8. Whip the Cream Cheese and Icing Powder together until smooth and spread over the cake.

  9. Chop the walnuts and sprinkle over the cake.

  10. Cut into your desired portion sizes and enjoy. Best served room temperature

 

Easter Show Apple and Date Cake

 Ingredients

  • 1 Cup Plain Flour

  • 1 Cup Lakanto Golden Sweetener

  • 2⁄3 Cup Lakanto Baking Blend

  • 3⁄4 Cup Cooked Chopped Apple

    (or Puree)

  • 1 3⁄4 Cups Water

  • 3⁄4 Cup Chopped Pitted Dates

  • 1⁄2 Cup Canola Oil (Or Similar)

  • 2 Whole Eggs

  • 3 tsp Cornflour

  • 2 tsp Gluten

  • 2 tsp Bi Carb Soda

  • 2 tsp Vanilla Essence

  • Pinch salt

    Easter Show Chocolate Mud Cake

    • 3⁄4 Cup Plain Flour

    • 3⁄4 Cup Lakanto Golden Sweetener

    • 1⁄2 Cup Lakanto Baking Blend

    • 1 Cup Grated Sugar Free Chocolate

    • 1⁄2 Cups Water

    • 1⁄4 Cup Canola Oil (Or Similar)

    • 5 Whole Eggs

    • 1 tsp Baking Powder

    • 2 Tbsp Lakanto Golden Malt Syrup

    • 2 tsp Vanilla Essence

    • Pinch of salt

    • 80g Unsalted Butter

    • 1⁄4 Cup Double Cream

       

    Tip: Use a 50/50 mix or almond and Coconut Flour to create a gluten free cake

    Method

     

    1. Preheat the oven to 160c

    2. In a mixer combine the eggs and sweeteners until light.

    3. Next melt 3⁄4 of the chocolate with the canola oil

    4. Add the dry ingredients to the egg mix and pour in the melted chocolate and golden malt syrup.

    5. Mix until Smooth

    6. Use a 8 inch cake tin or similar size baking tray.

    7. Spray with canola oil.

    8. Pour the batter into the tray and bake for approx 40-50 minutes until fully cooked.

    9. Remove from the oven and allow to cool.

    10. Heat the cream and add the remaining chocolate and stir until smooth and thickened. Allow to cool until it begins to thicken. Then pour over the cake and allow to set up in the fridge.

    11. Cut into your desired portion sizes and enjoy. Best served room temperature
