Mother's Day is just around the corner...so here's one of our favourite satisfying and warming breakfast or dessert options to serve Mum on the big day - without the added sugar (tell her she's sweet enough already!)

Prep Time: 20 minutes Cook Time 10 Minutes
Ingredients:
For the Crumble Topping
- ¾ Cup Unsalted Butter
- 1/3 Cup Almond Flour
- ½ Cup Gluten Free Flour
- 2 TBSP Coconut Flour
- ½ Cup Lakanto Monkfruit Classic Sweetener
For the Mixed Berry Filling
- ¼ Cup Lakanto Monkfruit Classic Sweetener
- 100ml water
- 3 Cups Frozen Mixed Berries
- 1 tsp cinnamon
- ½ Whole lemon
- 1 tsp Cornflour
Method:
- For the Crumble mix – combine all the ingredients into a bowl a mix until they look like bread-crumbs.
- Preheat your oven to 150c
- Place the crumble mix onto a non-stick baking tray and cook for approx. 20 minutes or until the crumble is looking lightly golden. (Note remove after 10 minutes and stir before resuming baking)
- Remove from the oven allow to cool and set aside. (Note this method will give you the crunchiest crumble topping and not a soggy one!)
- For the Mixed Berries – place the berries, sweetener, water cornflour and lemon into a small pot over a medium heat
- Once the liquid comes to the boil remove from the heat and pour into your crumble dish
- Next, top with your crumble mix and place immediately into a pre heated oven at approx. 180c for 10 minutes
- Then dust with cinnamon sweetener before serving with yoghurt, custard or ice cream.
Nutritional information per serve: 406 calories, 6g protein, 32.7g fat (17.1g saturated), 18.3g carbohydrates (7.3g sugar).
