Gluten Free Strawberry Muffins

Delicious gluten and sugar free muffins perfect for a snack or a light breakfast!

Serves: 12
Prep Time: 10 Minutes + 15 Minute Cook Time

Ingredients:

  • 2 Cups Gluten Free Flour
  • ½ Cup Monkfruit Classic Sweetener (ground)
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 teaspoon vanilla essence
  • 1 ½ Cups Milk
  • 1 tsp apple cider vinegar
  • 3 Tbsp Butter (Melted)
  • 8 strawberries

Method:

  1. Pre heat the oven to 200c
  2. Combine all the dry ingredients together and place in a blender
  3. Add the milk and cider then the melted butter
  4. Cut the strawberries into 1/6s and fold through the batter
  5. Use muffin cases and place into a muffin tin
  6. Add 1 ½ Tablespoons of batter per case or until just over half full
  7. Place the tray into the oven and bake at 200c for 5 minutes (this activates the batter quickly)
  8. Turn the oven down to 150c and bake for a further 10-15 minutes or until cooked
  9. For Light Sugarless Dusting Blend some of the Classic Sweetener into a powder and dust before serving.
