Delicious gluten and sugar free muffins perfect for a snack or a light breakfast!
Serves: 12
Prep Time: 10 Minutes + 15 Minute Cook Time
Ingredients:
- 2 Cups Gluten Free Flour
- ½ Cup Monkfruit Classic Sweetener (ground)
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 teaspoon vanilla essence
- 1 ½ Cups Milk
- 1 tsp apple cider vinegar
- 3 Tbsp Butter (Melted)
- 8 strawberries
Method:
- Pre heat the oven to 200c
- Combine all the dry ingredients together and place in a blender
- Add the milk and cider then the melted butter
- Cut the strawberries into 1/6s and fold through the batter
- Use muffin cases and place into a muffin tin
- Add 1 ½ Tablespoons of batter per case or until just over half full
- Place the tray into the oven and bake at 200c for 5 minutes (this activates the batter quickly)
- Turn the oven down to 150c and bake for a further 10-15 minutes or until cooked
- For Light Sugarless Dusting Blend some of the Classic Sweetener into a powder and dust before serving.
