½ cup coconut oil
¾ cup pumpkin puree
⅓ cup flax meal
1 tsp cinnamon
½ teaspoon nutmeg
¼ tsp salt
⅓ cup Lakanto Monkfruit Classic Sweetener
1. Mix all the ingredients in a medium bowl until well combined and then place in the freezer for 30 minutes.
2. Once the mixture has been in the freezer for 30 minutes, pull out the bowl and roll the mixture into balls.
3. Put balls in the fridge for 1 hour before eating or store in fridge up to 1 week.
