The Ultimate Chocolate Cupcake!

How could we share all these amazing chocolate recipes without an ultimate cupcake recipe. Decadent, chocolate-y, fudgy. 

Whip these up and they'll be gone by the evening. Traditional style cupcakes without the loads of sugar they'd usually have in them. 

Makes 8 Cupcakes 

Cupcake Base

  • 140g soft unsalted butter
  • 40g Lakanto Golden Monkfruit Sweetener
  • 100g Lakanto Classic Monkfruit Sweetener 
  • 3 medium eggs
  • 100g self-raising flour
  • 25g cocoa or cacao, sifted
  • 1/4 cup No Added Sugar Lakanto Chocolate Topping

Cupcake Frosting 

  • 85g Kojo Sugar Free Chocolate 
  • 85g soft butter
  • 100g Lakanto Classic Monkfruit Sweetener

 Method

  1. Preheat oven to 190C and place 8 cupcake liners into a muffin tray. Take the Classic Monkfruit Sweetener and blend in a mixer for 30 seconds to create a powder.
  2. Place all the ingredients into a mixing bowl and beat for 2 mins with an electric hand-whisk until smooth. 
  3. Divide between the cases so they are two-thirds filled, then bake for 12-15 mins until risen. Cool on a wire rack.
  4. For the frosting, microwave the chocolate on High for 1 min in 15 second bursts. 
  5. Cream the butter and classic monkfruit sweetener powder together, then beat in the melted chocolate. 
  6. Spread the frosting on the cooled cakes and decorate with your choice of goji berries, nuts and seed etc.
